Ham Salad with Arugula and Mango

Refreshing, sweet, acidic and super versatile.

INGREDIENTS

1 cup (tea) of Todo Dia seasoned and shredded ham
1 mango in cubes
1 bunch of mini arugula
¼ cup (tea) of roasted and chopped cashew nuts
1 tablespoon of mustard
½ tablespoon of vinegar
½ tablespoon of olive oil
1 tablespoon of honey
Salt and pepper to taste

METHOD OF PREPARATION

Discard the root, sanitize and dry the arugula leaves well (you can add other leaves of your choice).

In a glass jar with a lid, place the mustard, vinegar, oil and honey. Close and shake well to mix.

Place the arugula leaves on a platter and arrange the shredded ham over the leaves. Distribute the mango cubes and sprinkle the cashews. Drizzle with the sauce and serve immediately.
