Spring vegetable skewers

  1. Start by washing all the vegetables.
  2. Cut the zucchini into thick slices. Peel the carrots before cutting them into sections about 3 cm thick. Peel the shallots.
  3. Boil a pot of water. Add the vegetable bouillon cube to it. Blanch the zucchini pieces for 2 minutes, before adding the carrots, radishes and mushrooms. Leave to cook for 10 minutes.
  4. Drain the vegetables before immediately running them under cold water. Drain them again and place them in a bowl.
  5. Drizzle the vegetables with olive oil. Add the chives, chopped cilantro, then the pressed garlic clove. Season with salt and pepper. Mix everything. Leave to marinate for 2 hours.
  6. After this time, thread the vegetables on wooden picks in the desired order. Serve the spring vegetable skewers immediately.
