  • 1 small, finely chopped cabbage (about 1 pound; 450g)
  • 1 small red onion, thinly sliced ​​(about 6 ounces; 170g)
  • A handful of fresh mint leaves and chopped cilantro
  • 1 to 2 green chilies of Thai birds
  • 1 tablespoon (15ml) of juice of 1 lemon, more to taste
  • Sal kosher


  1. In a large bowl, combine cabbage, onion, herbs, peppers and lemon juice. Season with a large pinch of salt and massage to soften slightly. Taste and season with more salt or lemon juice to taste. Serve immediately.
