Italian sausage burgers stuffed with grilled mozzarella and pepper vinegar

For the sausage:
1 1/2 pounds coarse pork
1/2 tablespoon chopped black pepper plus 1/4 cup crust, divided
1/2 tablespoon kosher salt
1/2 tablespoon chopped onion
3 cloves of garlic, finely chopped (about 1 tablespoon)
1/2 teaspoon fennel seeds, lightly toasted and chopped
1/2 tablespoon dried basil
1/8 teaspoon dried oregano
1 teaspoon paprika
1/2 teaspoon cayenne pepper
1/4 teaspoon crushed red pepper
1 tablespoon fresh parsley, chopped
1 1/2 tablespoons balsamic vinegar
4 squares (1/2 by 2 by 2 inches) mozzarella cheese
For chili:
4 large peppers, seeds and stems discarded and cut into slices
2 tablespoons olive oil
2 tablespoons sherry vinegar
4 crispy buns
1/4 cup chopped fresh basil
1/2 cup ricotta cheese
1/2 cup homemade or purchased from store red sauce

In a large bowl, combine pork, 1/2 tablespoon ground pepper, salt, chopped onion, garlic, fennel, basil, oregano, paprika, cayenne pepper, ground red pepper, parsley, and vinegar. Mix by hand and stirring to distribute the seasonings evenly. Place in an airtight bag or container and refrigerate for at least 12 hours.

The toast is rolled over the fire until crisp. Remove from grill. Place the burgers on the bottom bread. Spread on ricotta cheese, top with red sauce, basil leaves and pepper, cover burgers and serve immediately.
