Pineapple Rum Punch Recipe
3/4 cups boiling water
1 1/4 cups sugar
3 cups ripe pineapple (about half a pineapple), roughly 1 square inch chopped
1 1/2 cups aged rum
1 cup fresh juice 6 to 8 lemons
1 1/2 cups cold soda water
6 lemon slices
Combine hot water and sugar until sugar dissolves. Add pineapple pieces and stir, crushing pineapple lightly. Let sit at room temperature for 2 hours, or cover and refrigerate overnight to prepare the infusion.
Pour the pineapple and sugar mixture into a large jar or punch. Add rum and lemon and mix well. Add sparkling water, stir gently and place in portioned glasses with ice. Serve with lemon slices.
