Pina Colada Recipe
- 1/2 ounce egg white
- 1 1/2 ounce white rum
- 30 g pineapple juice
- 30 g Coco Lopez coconut cream
- 1/2 oz freshly squeezed lime juice
- Garnish: cognac cherry
Whisk the egg white in a cold, ice-free cocktail shaker until frothy. (You can also use an immersion blender.)
Add ice, rum, pineapple juice, Coco Lopez and lime juice to the shaker. Shake until cool, about 30 seconds.
Fill a Collins glass with fresh ice, strain into a serving glass and garnish with cherry brandy.
