Yorkshire pudding recipe
- 1 cup (5 ounces) all-purpose flour
- 1/4 teaspoon kosher salt
- 4 eggs, beaten
- 1 cup (8 ounces) milk
- 1/2 cup fat (vegetable oil, bacon fat, clarified chicken fat, lard, or beef tallow)
Set the oven rack to the middle position and heat to 450 ° F. Whisk together the flour and salt, and in a second bowl, beat the eggs and milk. Slowly beat the flour mixture in the egg mixture until you have a smooth, lump-free dough.
Divide the fat into muffin tins or pour into a large roasting pan. Place the skillet in the oven and heat until the oil begins to smoke, about 10 minutes. Divide the dough between the muffin tins, about 1/3 full. (Save excess dough for a second batch. If using a broiler, pour out all of the dough at once). Cook until dough is light and golden, 10-12 minutes. Remove from oven and serve immediately.
