Fresh melon and paddy salad with lemon and thyme recipe

Ingredients
2 cups diced melon (about 12 oz; 340 g)
2 cups diced melon (about 10 oz; 285 g)
1 1/2 teaspoon fresh thyme leaves
Pinch of salt
1 teaspoon (5 ml) floral liqueur, such as liqueur chrysanthemum or elderberry (see note)
1 teaspoon (5 ml) good quality lemon juice or apple cider vinegar (see note)

Combine melon, paddy, thyme, salt, liqueur, and lemon in a small bowl; cover and refrigerate for 1 hour to melt the flavors, then stir again to serve. Serve with fresh ricotta as a salad, thin slices of ham as a canapé or pannacotta as a dessert.
